Well, I guess the facile answer would be "boring ones" unless they're assigned readings for a class, or something. Generally speaking, I don't like dry and dusty (who does?). When it comes to non-fiction, give me a good biography of Henry VIII or a book like "Everyday Life in Tudor England" over a name-and-date-heavy history book. Give me people I can care about or at least turn the facts into an interesting story!
And... well, I'm something of a prude. I don't read erotica. I rarely read books that are billed as 'romance' (eg Harlequins), though I don't mind a bit of a romantic subplot taking a back seat to the main story.
Other than that... I'll give most things a try, at least.
